Foodie Love ~ Maui Banana Bread

I am going to admit..... this is not exactly as good as the Maui Hana Highway bread.

I have been craving the amazing Hana Highway banana bread forever and being pregnant just made the cravings worse. So I set out to find an amazing recipe that would be close to the real deal. David is always making banana chocolate chip muffins, but he uses a very healthy recipe that I find way too dry. I came across a recipe on Pinterest, and after a little bit of adapting, we ended up with this...


So good, not calorie wise at all, and completely worth it.


The Necessities:
~ 3 Ripe Bananas
~ 2 Eggs
~ 1/2 Cup of Vegetable Shortening
~ 1 tsp of Baking Soda
~ 1/2 tsp Salt
~ 1 Cup of Sugar
~ 1 1/4 Cups of Flour
~ Cinnamon & Sugar to sprinkle on the outside

The Process:
~ Pre-heat the oven to 350F
~ Mash together bananas, eggs and shortening
~ Mix in baking soda, salt and sugar and blend well
~ Mix in flour
~ Spray a loaf pan with cooking spray 
~ Mix together a small amount of cinnamon and sugar and coat the inside of the pan with it
~ Pour batter into the pan and sprinkle the top with more cinnamon and sugar
~ Bake for 55 minutes
~ Allow to cool before flipping onto a baking rack to cool further
~ Enjoy!
